Gluten‑Free, Dairy‑Free Salads for Every Taste – Su’s Salad Guide

Welcome to Su’s Salad Guide! I’ll show you some of my favourite salads, exploring a range of flavours and vegetables and easy to make, that are both gluten-free and dairy-free.

When it comes to food, salads often steal the spotlight as the epitome of health-conscious choices. But here’s the twist – these vibrant bowls can be not only healthful but also immensely satisfying. Imagine a medley of crisp, organic greens layered with an assortment of nutrient-packed ingredients, all coming together in a harmonious blend of flavours and textures. This is the beauty of a well-crafted salad – it’s a canvas for creativity and nourishment. Especially with a decent home-made salad dressing.

From leafy greens that offer a dose of vitamins and minerals to a rainbow of colorful vegetables that provide antioxidants and fiber, each ingredient in your salad contributes to your overall well-being. Incorporating protein sources like fish, lean meats, tofu, beans, or quinoa adds that satisfying element that keeps you energised throughout the day. 1. Protein Buddha Salad Bowl

For someone that likes a bit of everything in their salad bowl. A mega-mix of protein, healthy fats, vegetables, and heavy on the fillings.

13 ingredients: Tuna, chickpeas, rocket, cucumber, picked onions, red pepper, tomato, fennel, avocado, celery, roasted red peppers, parsley and olives.

2. Protein and Sweet Potato salad

Mixing it up with healthy veg, complex carbs, asparagus, black beans, red pepper, organic salmon and spinach, avocado and organic black pepper. (Can you tell I love red pepper? It’s rich in vitamin C).

3. Light and airy protein sauerkraut salad

Peas, avo, watercress, spring onion, sauerkraut, edamame beans, red pepper, celery.

4. Quinoa, meat and veggie salad

Skinny turkey rashers, organic quinoa, organic veg (grilled courgettes, pepper, spinach, celery) olive oil and ACV (organic apple cider vinegar.) Loads of organic black pepper. Love it.

5. Asian prawn salad

Organic Prawns, organic salmon, gluten free rice noodles, fresh lime, coriander, mama nagis chilli paste, carrot, spinach.

6. Quinoa and chicken salad when you’re in a hurry

Ready-made organic quinoa (comes in a packet, Ocado are good). Chicken, flaked up. and chuck in whatever salad you have. And I used spring onions from the garden.

7. Su’s special organic chickpea salad

I made tons of this for my brother’s asian wedding party (he had 2 weddings wtihin 2 months. the first in a stunning venue in Cheshire, the second one he had it in a marquee, in my parents garden. They had Asian cuisine caterers and I offered to make a few salads, for approx. 60 people).

Tins of organic chickpeas, red pepper, orange pepper, tomato, red onion, red chilli, coriander, carrots, olives. With a lemon, lime, olive oil, cider vinegar salt and black pepper. All veg has to be sliced very finely. I used a chopping device (from TKMAXX actually!)

8. Simple 4 things salad

Avocado, tomato, egg, spinach

9. Fresh fennel salad for digestion

Organic lettuce, watercress, cucumber, finely chopped fennel, red & yellow pepper, carrots celery and parsley.

10. Rocket & quinoa green salad

Rocket, cucumber, red onion, tomatoes, green pepper, quinoa. Ok so its not that green 😉

11. Fill me up and go salad

Summer salad when you need filling up before you go out.
Broccoli, celery, boiled egg, olives, leaves, chicken, red pepper, avocado. And my own dressing.

12. Easy salad: Peas, chickpeas and quinoa.

Peas, quinoa, chickpeas and cucumber + my special dressing. That’s all!

13. Vegan salad with asparagus, fennel, radish and onion

A mega‑mix of vegetables with spring onion, red onion, chickpeas, peppers, tomato, cucumber, grated fennel, radish and olive oil dressing.
